Perlakuan yang diberikan adalah perbedaan persentase bekatul yang digunakan yaitu 0%, 25%, 50%, 75% dan 100%. Hasil penelitian menunjukkan adanya pengaruh nyata (P<0,05) terhadap kadar protein, kadar air, kadar lemak, dan sifat organoleptik. Penggunaan bekatul yang semakin tinggi menyebabkan semakin tinggi nilai kadar protein tiap perlakuan T0-T4 yaitu sebelum digoreng nilai berkisar antara 9,83 – 12,23% dan setelah digoreng 8,05 – 9,54%. Kadar air yang dihasilkan tiap perlakuan semakin menurun yaitu sebelum digoreng 58,22 – 55,36%, sementara setelah digoreng 51,47 – 47,27%. Kadar lemak sebelum digoreng 1,52 – 2,46% dan setelah digoreng 8,32 – 10,16%. Semuanya masih memenuhi standar mutu nugget menurut SNI 01-7758-2013 yaitu protein > 5%, kadar air < 60%, dan kadar lemak < 15%. Penggunaan bekatul juga meningkatan warna dan bau, serta menurunkan rasa umami dan tekstur kenyal. Nugget is a ready-to-eat meat product that is carried out by the meat grinding process and mixing with herbs and binders which are then printed according to the desired shape and coated with bread flour. So far the nugget products produced still contain little fiber. Therefore, it is necessary to diversify nugget food by using rice bran as a source of fiber and eel as raw material. This study aims to determine the effect of differences in the proportion of the use of bran to the protein content, water content, fat and organoleptic properties of eel nuggets. The treatment given is the difference in the percentage of bran used is 0%, 25%, 50%, 75% and 100%. The results showed a significant effect (P <0.05) on protein content, water content, fat content, and organoleptic properties. The higher use of bran causes the higher protein content value of each treatment T0-T4, that is, before frying the value ranges from 9.83 - 12.23% and after frying 8.05 - 9.54%. The water content produced by each treatment decreases, namely before frying 58.22 - 55.36%, while after frying 51.47 - 47.27%. Fat content before frying 1.52 - 2.46% and after frying 8.32 - 10.16%. All of them still meet the nugget quality standards according to SNI 01-7758-2013, namely protein> 5%, water content <60%, and fat content <15%.
