Lama penyimpanan sebagai petak utama (Main Plot) yaitu L0 = 0 hari, L1 = 4 hari, L2 = 8 hari, L3 = 12 hari, L4 = 16 hari dan L5 = 20 hari dan perlakuan pelapisan agar-agar dengan konseNtrasi berbeda sebagai anak petak (Sub Plot) yaitu P0 = 0%, P1 = 0,5%, P2 = 1% dan P3 = 1,5% dengan pengulangan dua kali. Data yang diperoleh dianalisis dengan menggunakan ANOVA. Hasil penelitian menunjukkan bahwa terdapat pengaruh lama penyimpanan terhadap kadar air, total asam, nilai pH dan total padatan terlarut pada tomat. Semakin lama disimpan kadar air tomat mengalami peningkatan, total asam mengalami penurunan, nilai pH mengalami peningkatan dan total padatan terlarut mengalami penurunan. Sedangkan pada perlakuan konsentrasi agar-agar tidak ada pengaruh terhadap kadar air, total asam, nilai pH dan total padatan terlarut pada tomat. Abstract The aim of this research is to determine the effect of agar-agar coating on tomatoes on its chemical properties. As well as know the optimum agar concentration in tomato coating on water content, total acid, pH value and total soluble solids. The research parameters include moisture content, total acid, pH value and total dissolved solids. This research uses Completely Randomized Design (RAL) with Split Plot pattern. Storage time as main plot L0= 0 days, L1= 4 days, L2= 8 days, L3= 12 days, L4= 16 days and L5= 20 days and treatment of agar coating with different concentrations as a child plot (Sub Plot) is P0= 0%, P1= 0.5%, P3= 1% and P3= 1.5% with double repetition. The data obtained were analyzed using ANOVA. The results showed that the effect of storage duration on water content, total acid, pH value and total soluble solids in tomatoes. The longer the tomato water content increases, the total acid decreases, the pH value increases and the total dissolved solids decreases.
