Perlakuan yang diterapkan dalam penelitian ini adalah formulasi sirup dengan pemberian konsentrasi ekstrak apu-apu yaitu T0 : 0% (kontrol), T1 : 1%, T2 : 2%, T3 : 3%, T4 : 4%. Parameter yang diamati dalam penelitian ini adalah viskositas dan uji hedonik. Hasil penelitian menunjukkan bahwa tidak terdapat pengaruh nyata antara lima formula yang berbeda terhadap viskositas. Formula SEA terbaik adalah sirup dengan konsentrasi ekstrak apu-apu 3% dengan viskositas 15,67 cP. SEA yang dihasilkan memiliki tingkat penerimaan yang baik. The purpose of this research was to make water lettuce extracts syrup (SEA) and to know the optimization of best syrup formulation with various concentration of water lettuce extract also the acceptance level of SEA. The treatment applied in this research was the formulation of syrup by giving different concentrations of water lettuce extract i.e.: T0 : 0% (control), T1 : 1%, T2 : 2%, T3 : 3% and T4 : 4%. The results showed that there was no significant effect between five different formulas on viscosity. The best formula was syrup with 3% water lettuce extract concentration with viscosity 15.67 cP. The resulting SEA has a good level of acceptance . }, issn = {2597-9892}, pages = {128--134} doi = {10.14710/jtp.2018.21520}, url = {https://ejournal3.undip.ac.id/index.php/tekpangan/article/view/21520} }
