Rancangan yang digunakan ialah Rancangan Acak Lengkap (RAL) dengan 5 perlakuan konsentrasi pektin : MOCAF dan 4 kali pengulangan yakni sebesar T0 (100%:0%), T1 (80%:20%), T2 (70%:30%), T3 (60%:40%) dan T4 (50%:50%). Data dianalisis menggunakan Analysis of Variance (ANOVA). Hasil penelitian menunjukkan bahwa semakin tinggi konsentrasi MOCAF akan meningkatkan kadar air, namun menurunkan total padatan terlarut, nilai pH dan kesukaan terhadap tekstur secara signifikan (P<0,05) namun masih sesuai dengan standar mutu selai berdasarkan Standar Nasional Indonesia (SNI). Selai kolang kaling dengan substitusi MOCAF hingga 40% merupakan perlakuan dengan daya terima baik oleh panelis berdasarkan kesukaan overall dengan nilai suka s.d. sangat suka. Dapat disimpulkan bahwa substitusi MOCAF sampai 40% berpotensi sebagai bahan alternatif pengganti pektin dalam pembuatan selai kolang kaling. The aim of this research was to determine the influence and best proportion of pectin substitution with MOCAF as a thickening agent in the manufacture of sugar palm fruit jam to chemical characteristics like moisture content, total soluble solids and pH value as well as overall. The experimental design used was Completely Randomized Design (RAL) with 5 treatmens concentration pektin : MOCAF and 4 replications. The concentration were used in this research; T0 (100%:0%), T1 (80%:20%), T2 (70%:30%), T3 (60%:40%), and T4 (50%:50%). The data obtained were analyzed using Analysis of Variance (ANOVA). The result showed that the higher concentration of MOCAF would increase water content, but descreased total soluble solid, pH value and texture preference significantly (P<0.05) but still accordance with the standard of jam quality based on Indonesian National Standard (SNI). Sugar palm fruit with MOCAF substitution up to 40% is a treatment with a good acceptance by the panelist based on the overall likeness with the value of likes – very like.
