Adequate fiber consumption can help control blood glucose levels. Corn and green beans are high-fiber foods with a low glycemic index. Objective : This study aims to determine the effect of high-fiber food bars on blood glucose levels in patients with type 2 diabetes mellitus. Method : This type of research is a quasi-experimental pre and post test design with control group. A sample of 60 people was divided into two groups, namely treatment and control using the accidental sampling method. The control group was given food bars 2x25 grams a day for 7 days while the control group was not given food bars. Blood glucose levels were measured before and after the intervention, then analyzed by paired test. The research was conducted at Gelumbang Hospital, Muara Enim Regency in January - May 2022. Results : Data analysis using paired sample t-test obtained the average difference in the decrease in blood glucose levels of the treatment group 51.53 mg/dl (p-value<0.001) and the comparison group 17.17 mg/dl (p-value<0.001). Statistical test results using the independent sample t-test obtained the difference in decreasing blood glucose levels in the treatment group and the control group of 34.367 mg/dl (p-value<0.001). Conclusion : Provision of high-fiber food bars as a substitute for snacks as much as 2x25 grams a day has an effect on reducing blood glucose levels in patients with type 2 diabetes mellitus.
